Just a little time in Scotland is all it takes to find delicious food, much less, make your own!
Here, in Edinburgh, lightly-fried fresh fish (if it’s too much batter, I peel someof it off (!)) and hand-cut chips.

Or, fresh fish atop a bean stew for a high-protein and yummy meal, also in Edinburgh.

On our own, lightly-fried (sautéd) cauliflower. This recipe is in my FoodWISE book—al dente Cauliflower (lightly steamed), dipped in egg batter and then whole-grain flour and sautéed in olive oil. Season liberally with garlic salt, pepper, and cumin (lots of cumin).

But it’s hard to beat the mushroom risotto and its full umami flavor that mushrooms impart to make a grain dish tasty.
